Rice Pakoda

One of the very simple recipe to make with left over rice. Easy to make this crunchy pakoda with few basic ingredients.


Ingredients:

Rice - 2 Cups
Onion (Finely Chopped) - 1/2 Cup
Green Chilli (Finely chopped)  -  1 tbsp
Curry leaves (Finely chopped) - 1 tbsp
Coriander leaves (Finely chopped) - 1 tbsp
Salt - 1/2 tsp
Asafoetida - 1/2 tsp
Oil - For frying

How to make:

1. Grind the rice in mixer just for 5 seconds so that its coarsely ground.
(If the rice is over cooked, then mash it with hand itself, grinding not required)

2. Mix all the ingredients and keep aside.

3. Heat oil and drop the pakodas in the desired shape you want. Fry till golden brown and  remove it on kitchen tissue to remove excess oil.

P.S: You can add herbs/vegetabales/kheema meat to give different flavour, twist and variety to this pakoda.

Tapioca Dosa

This is first recipe for this year... And I'm back with one of my favorite again..... Tapioca Dosa.... Some call this as kezhangu adai as well.... This will be very similar to adai dosa in taste and you can have it with coconut chutney, but i love it with curd / jaggery. Hence i didn't make coconut chutney. Very simple to make. I make this often, when its season for tapioca. My mom makes this often as well... When you buy tapioca, buy tender ones so that the tastes is delicious... Made this Yesterday for night dinner and posting the same for you all today...


Ingredients :

Tapioca (Peeled and cut into small cubes) - 2 cups
Raw Rice - 1 Cup
Boiled/Idli rice - 1/2 Cup
Toor Dhal - 2 tbsp
Urad Dhal - 1 tbsp
Red Chili - 5-6 nos.
Curry leaves - 1 sprig
Asafoedita - 1/4 tsp
Salt - 3/4 tsp


How to make:

1. Soak all the ingredients (except asafoedita & salt) in water for 2 hrs.

2. Grind them in mixer into coarse texture batter. Add asafoedita and salt.
(I generally grind the curry leaves also along as the flavour and taste will be better, also some of them takes the curry leaves when it is just used in batter and made dosa.)

3. Make dosa with gentle amount of oil (butter gives a rich taste) and serve it hot with coconut chutney !

Gobi Paratha

Gobi paratha is favorite of many.  Just another variety of stuffed paratha. Quite easy to make. Goes very well with dhal or just pickle and raitha / curd.Gobi paratha gives a similar taste as of paneer paratha, its because of the texture of the grated cauliflower being similar to that of paneer. Indeed a great item for dinner or lunch... Do try it you will know it for yourself....



Ingredients:

For Stuffing

Grated Cauliflower - 1 Cup
Onion (Finely chopped) - 1/2 cup
Ginger garlic paste - 1/4 tsp (optional)
Green Chilli (Finely chopped) - 1 tbsp
Salt - 1/2 tsp
Chilli Powder - 1/2 tsp
Garam Masala - 1/2 tsp
Corriander leaves (chopped) - 2 tbsp
Oil - 1 tbsp

For the dough

Whole wheat flour - 2 cups
Salt - 1/2 tsp
Water - 3/4 cup
Oil - 2 tbsp 

How to make :

1. Heat the oil in a pan and add the onion and ginger garlic paste. Saute for 5 mins.

2. Add green chili, cauliflower and saute for 2 mins. Add salt, chilli powder and garam masala.

3. Add the corriander leaves and mix well and remove from stove. Make small round balls of the stuffing and keep aside.

4. Stuff the mixture into each paratha dough and roll it to thick/thin paratha as you like.

5. Shallow fry the paratha on a pan with ghee or butter.

Tomato Masala Mini Uthappam

Bored with the regular dosa... Then this a must try variation.... you can make it like regular dosa or uthappam.. I made it small ones because we had it for evening snacks along with coffee/tea.  Since this uthappam has a different taste, you don't even need an accompaniment with this.. You can just eat it plain as it is...


Ingredients:

Dosa Batter - 2 Cup
Grated carrot - 1/2 cup
Corriander leaves (finely chopped) - 1/4 cup

For Masala:

Tomato (Chopped) - 1 Cup
Corriander seeds (Dhaniya) - 2 tbsp
Pepper corn - 1 tsp
Jeera - 1 tsp
Red chili - 3-4 nos.
Oil - 1 tbsp

How to Make:
1. Roast all the masala ingredients for 4-5 mins and grind it to paste by adding required salt for the masala.
2. Add this paste to the dosa batter and mix well.
3. Make small uthappam with the batter and top it with some carrot and corriander leaves. Cook well both the sides and serve it hot...

Aval Uppma


Aval/Poha / Rice flakes is very commonly used in western India... In south also its used, but not that extensively. I had bought a packet of aval almost 2 months back. So decided to make some dish with this. But what to make ? Then I remembered, my mom use to make uppma with aval. These are very tasty to have for change...

 
 
Ingredients:
 
Aval - 1 Cup
Salt - 1/4 tsp
Asafoedita - 1 pinch
Red Chilli - 2-3 nos.
Curry leaves - 1 sprig
Mustard - 1/2 tsp
Urad Dhal - 1/2 tsp
Oil - 1 tbsp
 
How to make:
 
1. Wash the aval thoroughly underwater, drain and keep aside for 5 mins. This will make the aval soft.
 
2. In a pan heat oil, add mustard, urad dhal. Once mustard crackles, add red chilli, curry leaves, asafoedita and finally the aval.
 
3. Saute for 2 mins. Add the salt and saute for 3-5 mins. Serve it hot...

Lemon Sevai

Morning for breakfast I had made Idiyappam(Readymade). Some were left...  So what to do with it ? I decided to make lemon sevai for evening. I made this only bcos some were left. But we all like it so much that, next time i will sevai just for making lemon sevai....


Ingredients:

Rice Sevai (Cooked)- 2 Cup
Lemon Juice - 1 tbsp
Turmeric power - 1/4 tsp
Salt - 1/2 tsp
Mustard - 1/2 tsp
Red chilli - 2-3 nos.
Urad dhal - 1 tsp
Cashewnut  - 2 tbsp
Curry leaves - 1 sprig
Asafoedita - 1/4 tsp
Oil - 1 tbsp

How to make:
 
1. Heat oil in a pan, add mustard, urad dhal. Once the mustard crackles, add red chilli, curry leaves, turmeric powder, salt, cashewnut and asafoedita.
 
2. Saute for a min and switch off the flame. Now add the lemon juice to it. Add the sevai and blend well.

Pizza Uthappam

Yday night I didn't feel like eating rice. So was checking in fridge what is left over. Little dosa batter was left. Then i made up my mind to have onion uthappam and took that out. Also saw half tomato in the fridge. So took that as well. While I was chopping the onion, came with a thought as why not make a pizza uthappam as i had cheese also. Then i included little capsicum, carrot and also some sweet corn. And to get that Pizza flavour, little oregano and chiili flakes also...This is such an easy way to make kids eat healthy vegetables with their lovable pizza flavour.  So here is the Pizza Uthappam.....



Ingredients:

Dosa Batter - 1 Cup
Finely chopped vegetables - 1/2 Cup
Oregano - 1 tsp
Chilli flakes - As per your taste
Mozzarella Cheese (grated) - 1/2 Cup

How to make:
1. heat the Dosa Pan and add 2 ladle of batter to make thick uthappam. Add all the vegetables on top of it. Keep the flame in simmer only.
2. After a min, just turn over the uthappam so that the other side with vegetables also cooks well. After a min, turn it over again and add the oregano, chilli flakes and mozzarella cheese and cover with a lid for a min. Remember to keep the flame in simmer only.
3. The Mozzarella cheese will melt soon and the pizza uthappam is ready to serve.....
P.S. Salt is not required for this as dosa batter will have salt and also cheese will be salty.

Bread Uppma

Bread was there at home.. Was wondering what to make for evening snacks... Then thought why not make uppma with bread.. Trust me, it was so yummy, that within minutes it got over...


Ingredients:

Bread - 5-6 Slices (Cut into small pieces)
Onion (Sliced) - 1/2 Cup
Tomato (finely chopped) - 1/2 Cup
Curry leaves - 1 sprig
Corriander leaves(finely chopped) - 2 tbsp
Mint leaves (Pudina - finely chopped) - 1 tsp
Green chilli (slit) - 2nos.
Chilli Powder - 1/2 tsp
Salt - 1/2 tsp
Oil - 2 tbsp
Mustard - 1/2 tsp
Urad dhal - 1 tsp


How to make:
 
1. In a pan, heat oil, add mustard and urad dhal. Once the mustard crackles, add the onion, green chilli, curry leaves and saute till the onion turns golden brown.
 
2. Add the tomato and saute for 2-3 mins.  Add salt, chilli powder, corriander leaves, mint leaves and saute till the raw flavour goes.
 
3. Add the bread pieces and blend well. Cooks for 2-3 mins and garnish with corriander leaves.

Aloo Bonda

Its been a long time since i ate the yummy Aloo Bonda... Made tasty, one can surely munch of 5-6 bonda's easily.... When i made i thought I'm making more and some will be left over... But within 10 mins after making, there was nothing left and people at home wished if there were some more.... Here is the recipe for you all.. Have a smacking evening...!!
 
 
Ingredients:
 
For the stuffing:
 
Potato(Boiled and roughly mashed) -  2 Cups
Onion (Sliced) - 1 Cup
Curry leaves - 2 sprigs
Green chilli (finely chopped) - 2 tsp
Ginger (finely chopped) - 1 tsp
Salt - 3/4 tsp
Turmeric powder - 1/2 tsp
Mustard - 1 tsp
Channa dhal - 1 tbsp
Asafoedita - 1/2 tsp
Oil - 3 tbsp
 
For the batter:
 
Besan flour - 1 Cup
Salt - 1/4 tsp
Chilli powder - 1/2 tsp
Asafoedita - 1/4 tsp
Water - 1/4 cup
 
Oil - for frying the bonda
 
How to make:
 
1. Lets make the stuffing first. In a pan, heat oil and add the mustard and channa dhal.
 
2. Once the mustard starts crackling, add the green chilli, ginger and curry leaves. Add the sliced onion and saute till the onion turns transparent.
 
3. Add the turmeric powder, salt, asafoedita & saute for 2 mins. Now add the potato & blend well.
 
4. Saute for 2-3 mins and keep aside. The stuffing will look like this once cooked. Once it cools down, make round balls. The stuffing is ready now.

 
5. In a large bowl, add the besan flour, salt, chilli powder, asafoedita and mix well. Add the water slowly to make a thick batter. Its should be in coating consistency.
6. In the frying pan, heat oil for frying. Dip the potato balls in the besan batter and drop it in the hot oil. Fry untill it turns golden brown.
 
7. Serve it hot with coconut chutney... Nangalam apdiye sapiduvum ;-) .................

Masala Chappathi


This is first post for this year... So wanted to make a simple one first... This a variation to the regular chappathi what we normally make at home. Of course very simple to make with difference in taste. Any gravy will go well with this chappathi or if you prefer you can it plain as it is as well...



Ingredients:

Wheat flour (Atta) - 2 Cups
Salt - 1/2 tsp
Chilli powder - 1 tsp
Corriander powder - 1 tsp
Garam masala - 1/2 tsp
Water - 3/4 Cup
Oil - 2 tbsp

How to make:

1. Mix all the dry ingredients in a large bowl.

2. Add water make it to a dough. Add the oil and knead for 8-10 mins to make a soft dough.
Use warm water so that the chappathi will come soft.

3. Make chappathi's using oil/butter as per your preference.

Multi flour Dosa

Need a change from routine dosa what we eat, here is an option. This multi flour dosa is different in taste and very healthy too. Quick and easy to make. I made pudina chutney to serve along with. And i also had the tomato garlic thokku which also goes very well with this dosa. 



Ingredients:

Wheat Flour - 1 Cup
Ragi Flour - 1/2 Cup
Corn Flour - 1 tbsp
Rice Flour - 1 tbsp
Salt - 1/2 tsp
Water - 2 Cups

How to make:

1. Make a batter with all ingredients without any lumps. Leave it for 5 mins.

2. Make crispy dosa and serve it hot with your preferred chutney.

Rava Kichadi

Uppma is a very light tiffen to make for morning breakfast or sometimes for dinner as well. Many people don't like uppma, even i don't like uppma much... Although Kichadi is similar to uppma, i don't why i love this Kichadi, especially Kichadi from Saravana Bhavan..... Woooooo, i just love it with their Sambhar and coconut chutney. Many times i have tried making similar Kichadi, but i still don't get the Saravana Bhavan taste.... But nevertheless it comes close to it. Here is my version of Kichadi
 
 

Ingredients:

Rava/Sooji (Roasted) - 200 gms
Onion(Thin slices) - 1/2 cup
Carrot (Finely chopped) - 1/4 cup
Beans (Finely chopped) - 1/4 cup
Green Peas - 2 tbsp
Ginger (Finely chopped) - 1 tsp
Green Chilli (Finely chopped) - as pr your taste
Curry leaves - Few
Salt - 3/4 tsp
Turmeric Powder - 1/4 tsp
Asafoedita - 1/4 tsp
Ghee - 3tbsp
Mustard - 1 tsp
Urad / Channa Dhal - 1 tsp
Water - 2 cups

How to make it:

1. In a pan, heat 1 tbsp of ghee and add mustard & dhal. Once the mustard crackles, add the curry leaves, green chilli. Add onion & ginger and saute for 2 mins.

2. Add the veggies ( carrot,beans, green peas) and saute for 3 mins. Add the Salt, turmeric powder, asafoedita and mix well. Saute for 5 mins. Since the veggies are chopped finely, it will cook by now.

3. Add the water and bring it boil. Now add the rava/sooji slowly and keep stirring. Make sure no lumps are formed...

4. Add the balance 2 tbsp of ghee little by little. Within 2-3 mins the uppma will be ready...

5. Serve it hot with Coconut Chutney... If u have sambhar also, nothing like it... ;-)

Mysore Bonda

One of the simple snack to enjoy for the evening tea time... Now you might think why is this called Mysore bonda, is it famous in Mysore ? I also dont know the reason, but I can assure you that you will definetely not forget the relishing taste of this bonda...
 


Ingredients

All purpose flour / Maida - 1 Cup
Rice Flour - 1/2 Cup
Butter milk (thick) - 3/4 cup
Green Chilli (finely chopped) - 1 tbsp
Curry leaves - 1 tbsp
Corriander leaves - 1 tbsp
Jeera - 1/2 tsp
Pepper corns - 1 tsp
Salt - 1/2 tsp
Baking Soda - 1/2 tsp
Asafoedita - 1/4 tsp
Oil - For Frying

How to make:

1. Mix all the ingredients to get a thick batter (similar to medu vada batter consistency).

2. Heat oil in a kadai and drop in the batter like bondas. Fry till golden brown.

3. Serve it hot with coconut chutney....

Veg Delite Pizza

In Junk food category this is one favorite item for many of us... What made me try this Pizza at home... I couldn't find any other better reason than this... Gas was over at my house last week and couldn't get one the same day. Shop fellow told that he will able to deliver only the next day.... Thankfully i finished making some gravy for the afternoon which we ate during lunch along with Kuboos (which is famous in gulf country - tastes like a combination of naan and bread ). There were few Kuboos left and didn't know what to make for dinner.... Finally came up making Pizza with kuboos as base... Of course needless to mention, its so easy to make.....
 
 


Ingredients:
 
Pizza Base - 1 (If you have Kuboos, pls use that... ;-)...  )
Sliced Onion  - 1 tbsp
Sliced Tomato - 1 tbsp
Sliced Capsicum -  2 tbsp
Sweet Corn - 1 tbsp
Sliced Olives - 1 tbsp
Chilli flakes - as much as u like
Salt - just to sprinkle (Even if you dnt use salt, its ok... bcos cheese will be slightly salty)
Mozzarella Cheese - 4 tbsp
Sweet & Sour sauce / tomato ketchup - 1 tbsp
Oregano - as much as u like
 
How to make it :
 
1. In the Pizza base, first spread the tomato ketchup and sprinkle 3 tbsp of mozzarella cheese..
 
2. Spread all the veggies on top the mozzarella cheese and sprinkle the balance 1 tbsp of cheese on top of this... (You can use many more veggie or non veg as well.. In case of non veg, pls pre cook the non veg before). If you are using salt, pls sprinkle now.
 
3. Set the microwave at 20 % (180` C). Place the Pizza in the microwave and cook it for 10 mins now... The mozzarella cheese will melt and all veg will be coated with cheese...
 
4. Sprinkle oregano & chilli flake as per ur taste and enjoi the mouth watering melting pizza........

Pazham Pori

 Its a easy snack made with nedaram banana, which is little sweet... Famous in Kerala.... Once you start making it, it will become famous in your kitchen also.... Slightly heavy... You can have it morning breakfast or evening snacks also... So what are you waiting... Try it out..!
 

 


Ingredients:

Kerala Banana(Nediram - Not so ripe) - 2 Nos.
All purpose flour(Maida) - 1/2 cup
Sugar - 2 tsp
Cardamom -1-2 nos (powdered)
Turmeric - 1 pinch (if u have yellow colour u can use that also)
Water - 50 ml
Oil - To fry

How to make:

1. Cut the banana into half and slit into half. 1 banana will make 4 piece.

2. Mix maida, sugar, cardamom powder, turmeric and water. It has to be thick batter consistency.

3. Now dip the cut banana in the batter and fry till the batter coating is well cooked.

Paneer Wrap

Wrap are so filling... Its just takes 5 mins if we have the ingredients ready. Now dont think there are too many ingredients, they are just few.... Kids will love this wrap...


Ingredients:

Chappthi - 2
Onion small size - 1
Carrot (grated) - 2 tsp
Paneer - 4 tsp (grated or chopped into small cubes)
Salt - 1/4 tsp
Sweet and sour tomato ketchup - 2 tsp ( u can  also use chilli garlic tomato ketchup also)
Mint chutney - 1 tsp
Oil - 1 tsp

How to make:

1. In a pan saute the onion, carrot with 1 spoon of oil for 1 min and add the paneer.

2.Add tomato ketchup and salt and saute for 1 more min.

3. Now in 1 side of the chappthi spread this mixture and sprinkle some mint chutney on top of it.

4. Roll this, cut into pieces and start munching....

You can make this spicy, sweet, sour.. All you have to do is to add your favorite sauce or veg to it... Non veg lovers can also add sausage to it.....

Note: If you like cheese, pls add while you spread the sauteed mixture and after rolling it, keep it in microwave for 30 sec, so that the cheese will melt. You can also add Mayonaise.... make your favorite wrap and enjoy ... !

Adai (Dosa)

What do I say... This is again one of my favorite.... Just love this multi pulses tiffen that is so rich in protein and other nutrition. Its so delicious with melting butter and jaggery. Every time my mom makes i will be so happy... Usually she makes it for dinner and that night I'm all excited, but my brother will be frowning at other end as he doesn't like that much, still he manages to eat 2-3 Dosa....


Ingredients

Rice - 1 Cup
Channa Dal - 1/2 Cup
Urad Dal - 1/2 cup
Toor Dal - 1 Tbsp
Red Chilli- 4-5
Salt - 3/4 tsp
Curry leaves - Few
Asafoedita - 2 pinch
Oil - 2 tsp

How to make:

1. Soak the rice, dals and red chili for 2 hours.

2. Grind the dal and rice in a mixer. Add the red chili and salt also. Grind it coarsely. This should be a thick batter.

3. Add asafoedita and finely chopped curry leaves. You can also add little coconut incase u like coconut taste.

4. Make the dosa and keep it little longer in simmer than normal dosa so that it becomes little crispier.

5. Serve it hot with butter and jaggery..

Spongy Dhokla

One of my favorite snack Dhokla.... Every time I go to Gangotree, this is a sure to order item... Though my hubby doesn't like this yellow spongy treat, he will definitely buy for me... Here in Qatar where will i find Dhokla at shop ? Its very hard to get most of the delicious Indian items/ snacks.... So thought why not try it out at home... But i didn't have the patience to grind the dough and ferment it overnight... So googled this instant Dhokla recipe... Tried at home and it was a real success... And here it is....


 
Ingredients:

1 cup of Besan flour (Channa dhal flour)
1/3 cup of sooji/rava
1/2 spn salt
3 spn sugar
1/2 spn citric acid
1 spn ginger chilli paste
1 spn Eno fruit salt
1 cup water

For Seasoning

Mustard - 1 tsp
Slit Green Chilli - 2-3
Corriader leaves (Cilantro) - 2-3 tsp
Oil - 2 tsp

How to make:

1. Mix all the ingredients except the ENO in a bowl... Mix nicely without any lumps. It should be in batter consistency.

2. Now add the eno fruit salt and add 1 spn of water.... The moment u add water, so much of froth will come. U will have to mix very fast now and blend the eno....

3. Grease a square or round vessel and pour this wet batter.

4. Now steam this for 10-15 mins.... Keep it in steam only after the water starts boiling....

5. Once its cooked, u can sprinkle the seasoning with mustard seeds, green chilli, and corriander leaves.... u can use little coconut also.... it will be very tasty. You can sprinkle some sugar water if you like it little sweet....

6. Now what, just serve it with mint chutney.... Enjoy the super spongy instant dhokla.
